Magic Chicken

How’s your summer been going? In the Baker house, it’s been a little lazy.

I don’t know about anyone else, but here in southwestern Oklahoma it’s been summer since before Memorial Day. We’ve already seen a couple of days with temperatures in the 100s. Lately it’s been in the mid to upper 90s and mostly no rain. It’s going to be one of those long hot, dry summers with the chance of grassfires.

With the temperatures being so hot, I sure don’t like to be in the kitchen cooking dinner (especially when all we have are three window air conditioners and fans). That’s when I like to look for slow cooker recipes. Slow cookers really do keep your kitchen cool, plus they free up time for you for other things.

What I like to do is make up a batch of chicken or pork in my slow cooker and then divide the meat up for different meals. Tastefully Simple has a product that helps with that, it’s called magic Chicken…so convenient—make, freeze, and enjoy! There are two flavors, original and taco.

Magic Chicken

4 pounds boneless skinless chicken breasts and/or thighs

2 cups water or no/low sodium chicken broth

6 tablespoons (about 2 capfuls) Magic Chicken Seasoning Blend

  1. In a 4-quart or larger slow cooker, combine all ingredients, sprinkling each layer of chicken with seasoning.
  2. Cook on LOW 5-7 hours.
  3. Chop or shred chicken; toss with liquid in slow cooker.
  4. Divide among 4 (1-quart) freezer bags (2 cups per bag).
  5. Freeze, if desired.

Makes 4 (2-cup) portions or 16 servings.

Use the thawed chicken in place of store-bought rotisserie chicken.

Electric Pressure Cooker Directions: Prepare step 1 in 6-quart or larger electric pressure cooker. Cook 15 minutes on pressure cooker setting. Let stand 10 minutes before releasing pressure. Continue with step 3.

Recipes using Magic Chicken:

Magic Taco Chicken

4 pounds boneless skinless chicken breasts and/or thighs

2 cups water or no/low sodium chicken broth

8 tablespoons (about 4 capfuls) Magic Chicken Taco Seasoning Blend

  1. In a 4-quart or larger slow cooker, combine all ingredients, sprinkling each layer of chicken with seasoning.
  2. Cook on LOW for 5-7 hours.
  3. Chop or shred chicken, toss with liquid in slow cooker.
  4. Divide among 4 (1-quart) freezer bags (2 cups per bag).
  5. Freeze, if desired.

Makes 4 (2-cup) portions or 16 servings.

Use for your favorite Tex-Mex dishes such as burritos, tacos, quesadillas, casseroles, salads, nachos, or whatever you like.
